Veggie burger with crispy mushrooms. If you want to vary a little from the usual beef or chicken burger, or if you are looking for a vegetarian alternative, this could be just the recipe for you. Every time I have proposed them they have always been a great success: they are crunchy, tasty and with a truly exquisite sauce, which you can adapt according to your tastes.

In my case I then stuffed it with cheese, tomato and salad, but the recipe is also suitable for a vegan variant, for example if you use vegan cheese and slightly modify the sauce.

Veggie burger with crispy mushrooms

Ingredients (burger – 2 people):

  • 2 bunches of oyster mushrooms (oyster mushrooms)
  • 2 hamburger buns
  • 1 tomato
  • 2 lettuce leaves
  • 2 slices of cheese / vegan cheese
  • Seed oil for frying

Ingredients (batter):

  • 100g flour
  • 180ml water
  • 1/2 teaspoon of salt
  • 1 teaspoon of paprika
  • 1/2 teaspoon of red pepper
  • 1/2 teaspoon of garlic powder
  • 1 teaspoon of sugar
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of pepper
  • Panko for breading (or coarse breadcrumbs)

Ingredients (sauce):

  • 2 tablespoons of vegan mayonnaise / mayonnaise
  • 1 tablespoon Sriracha
  • 1/2 tablespoon chili sauce
  • 1/2 tablespoon of rice vinegar
  • 1 tablespoon of light soy sauce

Directions(Veggie burger with crispy mushrooms):

  1. Start by cleaning the oyster mushrooms, using slightly damp kitchen paper. It is better not to wash the mushrooms under running water, but only to remove soil residues or impurities by dabbing with damp paper or by eliminating small parts with the help of a small knife.
  2. Then prepare the batter, first mixing all the dry ingredients and then gradually adding the water. Keep stirring as you pour, so you get a smooth, lump-free batter. Pour the panko or breadcrumbs into another container. If you use the latter, I advise you to use one that is not too fine.
  3. Pour into a saucepan with high sides of the oil for frying, so that there is enough for the mushrooms to be almost completely immersed. Heat it and when it reaches temperature, fry the mushrooms until they are golden brown.
  4. Then drain well and place on absorbent paper, so that not too many oil residues remain.
  5. At this point, toast the hamburger buns and mix all the sauce ingredients.
  6. Then sprinkle the base of the sandwich with the sauce. Arrange a group of mushrooms, cheese, a couple of tomato slices, the salad and a little more sauce on top. Close the sandwich and enjoy immediately!
