Ingredients:

  • 100g soft butter
  • 260g flour 00
  • 2 lemons
  • 100g sugar
  • 1 egg
  • 1/2 sachet of baking powder
  • 1 pinch of salt

Directions:

  1. Begin to blend the softened butter with the sugar, until you get a cream.
  2. Then add the egg, zest and lemon juice. I recommend using untreated lemons to make sure the rind is not harmful.
  3. Stir again and then add the flour, baking powder and a pinch of salt (optional)
  4. Knead well, first with a fork and then with your hands. The mixture will be soft. At the end you will have to form a ball, cover it with cling film and place it in the refrigerator for at least 1 hour.
  5. When the dough has hardened, remove from the refrigerator and roll out on a floured surface to a thickness of about 0.5cm
  6. Make the cookies with a Christmas cookie cutter and then bake in a static oven at 180° C for 12-15 minutes. The biscuits should be slightly golden, but not too dark.
  7. Let it cool before putting it in a bag or, even better, in a tin box. They must be consumed within a week.
