Cocoa powder Christmas cookies. Cocoa shortbread biscuits are a classic and are suitable for any occasion, especially if you are a chocolate lover. They are also perfect for the Christmas holidays, to offer guests with a good tea or coffee, or to give as gifts.
Cocoa powder Christmas cookies
Ingredients:
- 220g flour 00
- 100g butter
- 1 egg
- 30g unsweetened cocoa powder
- 60g sugar
- 60g brown sugar
- 1 sachet of vanillin (optional)
- 1 pinch of salt
Directions:
- Pour the sifted flour and cocoa into a bowl, so that they do not form lumps. Then add the sugars, a pinch of salt and the chopped cold butter. If you like the vanilla flavor, add a sachet of vanillin or a teaspoon of vanilla extract at this point.
- Knead with your hands, rubbing the flour and butter between your fingers, in order to obtain a sandy mixture.
- Add the egg, start incorporating it with the help of a fork and then go back to using your hands, kneading and compacting the mixture well.
- Wrap it with cling film and then place it in the refrigerator for half an hour, so that it cools down and compacts well.
- Remove from the fridge and roll out on a floured pastry board to a thickness of half a centimeter. Then cut with Christmas themed cookie cutters.
- Bake in a static oven at 180° C for about 15 minutes. Then let them cool on a wire rack, so that they do not remain damp in the lower part.
- You can keep them for a week in an iron tin, or give them as a gift within a couple of days packed in classic biscuit bags.
