Cocoa powder Christmas cookies

Ingredients:

  • 220g flour 00
  • 100g butter
  • 1 egg
  • 30g unsweetened cocoa powder
  • 60g sugar
  • 60g brown sugar
  • 1 sachet of vanillin (optional)
  • 1 pinch of salt

Directions:

  1. Pour the sifted flour and cocoa into a bowl, so that they do not form lumps. Then add the sugars, a pinch of salt and the chopped cold butter. If you like the vanilla flavor, add a sachet of vanillin or a teaspoon of vanilla extract at this point.
  2. Knead with your hands, rubbing the flour and butter between your fingers, in order to obtain a sandy mixture.
  3. Add the egg, start incorporating it with the help of a fork and then go back to using your hands, kneading and compacting the mixture well.
  4. Wrap it with cling film and then place it in the refrigerator for half an hour, so that it cools down and compacts well.
  5. Remove from the fridge and roll out on a floured pastry board to a thickness of half a centimeter. Then cut with Christmas themed cookie cutters.
  6. Bake in a static oven at 180° C for about 15 minutes. Then let them cool on a wire rack, so that they do not remain damp in the lower part.
  7. You can keep them for a week in an iron tin, or give them as a gift within a couple of days packed in classic biscuit bags.
